White Chocolate Macademia Nut Cookies
Ingredients
- 1 cup butter, softened
- 2/3 cup sugar
- 1 cup brown sugar
- 1 Tablespoon vanilla
- 2 eggs
- 2 1/2 cups flour
- 1 Tablespoon corn starch
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup white chocolate chunks
- 1 cup macadamia nuts, roughly chopped
Directions
Heat the oven to 325° F.
In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the vanilla and eggs, and mix until smooth. Add the flour, corn starch, baking powder, and baking soda, and mix until just combined. Stir in white chocolate chunks and macadamia nuts. Cover the dough and refrigerate for 30 minutes to 1 hour.
Roll into 1-inch balls and place on a lined baking sheet. Bake for 10-12 minutes, or until the edges are firm and golden brown.
